Since we are not traveling much this month, we are Since we are not traveling much this month, we are doing our best to utilize our time and get our house in Nebraska more organized. Yesterday, we tackled the laundry room. Swipe through to see the "before" pic.

In about an hour, we (mostly Ann) were able to put things away, organize the cupboards, and give the whole room a good cleaning. And it feels so good to have it clean and organized!

When we bought our house 10 years ago, it didn't have a laundry room. Instead, the laundry hookups were in a small space between the door that attaches to our garage and our kitchen. We got tired of having to step over piles of dirty laundry to get into the house and eventually had this room constructed with space we took from our garage. 

It was one of the best home improvement projects we've done and gives us a nicer entrance into our home and provides lots of extra storage space.

And since embarking on a new, healthier lifestyle over the past few years, we've found ourselves enjoying an occasional outdoor hike more and more. ⁣

This morning we chatted online with friend and fellow travel blogger, Kay Johnson, of @happytrailshiking. We met Kay at a @midwesttravelnetwork in @northdakotalegendary. As a much more experienced hiker, Kay was able to share knowledge of hiking with us and answered some of our questions about finding trails and the best equipment for beginning hiking.⁣

Tonight, we had jarred pasta sauce with two different types of pasta (we didn't have enough of one for both of us) and a big salad. What a difference a year makes! 😂 ⁣

Nonetheless, it was fun to see some of our photos from that magical night and remember the incredible food and wine, the impeccable service and the friendships that flourished that night on the @CelebrityEdge. ⁣

Last winter, if the temps were below 50 degrees, we used that as an excuse to not go outside. That's not the case anymore. We have found that if we dress for the cold weather and just push ourselves a little bit to get outside, it's really not so bad. ⁣
⁣
This week we traveled to Platte River State Park near Louisville, Neb. and hit the trails. We are admittedly ameteur hikers and didn't bring the right footgear, but we still enjoyed a nice walk in the snow and got more movement into our day. And, we're already making plans to return, as the park was just beautiful and lots to see and do while socially distancing. ⁣
⁣
Honestly, we're actually starting to enjoy our winter walks. How about you? Do you exercise outdoors in the winter where you are?
You may not think there are healthy ways to eat po You may not think there are healthy ways to eat potatoes, and we understand why. Most of us are used to eating them as high-fat and high-calorie french fries or chips. When they're not fried, potatoes are often loaded up with butter, cheese, sour cream, and bacon. 

It turns out, there are lots alternative delicious and healthy ways to eat potatoes and they are a great source of vitamins, nutrients, and carbs. Tators are also filling, satisfying and typically inexpensive so they're easy on your grocery bill.

☀ Yesterday was another one of those rare winter days in Nebraska where the sun was shining, the sky was blue, and temperatures reached the mid 50s. We saw the forecast a few days prior and arranged our week so that we could spend some time outdoors and take a hike.⁣
⁣
🚙 We drove about an hour to Platte River State Park. See what we did there and what cut our hike short in our stories. ⁣
⁣
❄ We didn't get to take as long as a hike as we'd wanted. We are admittedly new at all this outdoor stuff and have a lot to learn. But we're experimenting and trying! Nonetheless, we did enjoy just getting out of the house, exploring nature, and taking time to breathe in fresh air and quiet our minds. And we'll definitely be going back. ⁣
⁣
🌲 As we've learned over the past year, taking a hike has lots of health benefits, as well. Spending time walking in nature can lower your risk for heart disease, improve your blood pressure and blood sugar levels, boost bone density, build muscle strength, and improve balance. ⁣
⁣
🌨 It's not always easy to get outdoors in the winter months, but this year, we're trying to embrace the cold and do what we can to get outside. How about you? How do you spend time outdoors in the winter? ⁣
