Lasting memories

I will never forget the taste of the beautifully presented, fruit covered waffle we had in Belgium or the spinach pie we learned how to make in Mykonos, Greece. If I think about it, I can almost taste the the paella Steve and I shared with our daughter, Meghan, on the square in Salamanca, Spain and the ricotta stuffed ravioli we prepared ourselves in Tuscany last summer.

Yes, I have a love affair with food. Trying new cuisine is one of my favorite things to do when we travel. And when we have the opportunity to learn how to prepare an authentic local dish, it becomes a fond and lasting memory of our time in that place.

So when we got an email from a company called The Chef & The Dish, I was instantly intrigued. The company was founded by Jenn Nicken, the former head of marketing for the entertainment division of Apple/iTunes in Canada who left to pursue her love of all things food and travel.

Creating The Chef & The Dish

After traveling the world and tasting foods of each region, Jenn returned to Canada and put together the recipe for her own new business, The Chef & The Dish.

She created a company that brings world-class chefs into the home kitchens of people (like you and me) all over the world. Through the magic of the internet and video conferencing software called Skype, The Chef & The Dish connects its customers with a highly trained chef. She or he teaches you, step-by-step, how to create a specialty meal from her/his region.

There are dozens of different cooking classes to choose from, including Hungarian goulash, traditional Spanish tapas, and okonomiyaki from Japan. The chefs may be home cooks, have Michelin stars or have been trained by their grandmothers. But they have all been selected for being great cooks as well as great teachers and effective communicators. And, they are fun!

We had the pleasure of taking a complimentary Italian cooking class via Skype with Chef Paola Martinenghi who instructed us from her small village near Milan, Italy. We’ll write more on that, later.  For now, just know that she is FABULOUS!

How The Chef & The Dish works

First, let me tell you how this whole The Chef & The Dish thing works. The first step is to make sure you have a laptop or tablet (like an iPad or Samsung Galaxy). It needs sound, a built-in camera, and a high speed Internet connection. Second, you just visit The Chef & The Dish website a book a class online.

Cost of the classes begins at $299 for two people, which we found comparable to cooking classes we’ve taken abroad. Once they receive your booking, a kitchen assistant will contact you to set up a personal kitchen prep session. Our cooking assistant (Jenn herself) reviewed our shopping list with us, answered all our questions, and even helped us find the best camera angle for our online class.

Before our video conference, Jenn emailed us a detailed grocery list and recommendations for kitchen supplies we’d need. She walked us through each list and even offered to call around to help us find specific ingredients for our recipes. Jenn also explained how our cooking class would work and what to expect from Paola. By the end of our video conference, we felt well-prepared for our culinary experience.

Several days before our class, we did all of our grocery shopping and were easily able to find everything we needed. Next, we prepped our kitchen with all of the necessary pans and mixing bowls. We also made sure we had a bottle of Prosecco chilling in the fridge because drinking wine while cooking just seemed to make it a little more Italian.

On the day of our cooking class, we gathered all of our supplies in the kitchen, and set up our computer. Then, at the appropriate time and from her kitchen in Italy, Chef Paola appeared on the screen of our laptop. We were ready to begin our culinary journey!

  • Late breakfast, early lunch. Time got away from us this morning so we had a bit of a brunch. We have been on an oatmeal kick this year for several reasons. It's inexpensive, filling, tastes great, and is typically readily available at grocery stores and hotels that serve breakfast. ⁣
⁣
One cup of oatmeal cooked in water is about 160 calories (and a "green" food on our @noom weight loss app). We like to add a teaspoon of brown sugar, a little cinnamon, and lots of fresh berries. Other options are: bananas, nuts, nutmeg, diced apple, flax seed, or dried fruits. ⁣

  • Our daffodils are in full bloom here in Nebraska and they just make us smile. We brought the  bulbs for these flowers from Ann's first house when we got married and moved here. Ann had dug them up from her grandma Rashleigh's home in Fremont, Nebraska, and her grandma had brought them to the U.S. from a trip that she took to England. ⁣

Ann's grandma passed away several years ago. Each spring, these flowers bloom and remind Ann of her grandma and her beautiful soul.
  • We love to travel but we're staying home to flatten the curve. As travel bloggers, writers, and influencers, we all have canceled trips, postponed adventures, and rescheduled experiences. ⁣

We know this is temporary and soon enough, we'll be traveling again. But for now, we are all staying safe at home and encourage you to do the same. And while you’re home, check out some of these influencers’ feeds for travel inspiration.
  • Last week, we had the pleasure of making handmade pasta (via the internet) with our friends, Deb and Massi, who were in their home kitchen in Italy. ⁣

We met Deb and Massi of @italyunfiltered a few years ago when they created an amazing food and wine itinerary for us. We've remained friends and it was so good to see them, even if they were a world away.
  • We were supposed to be in Rochester, Minnesota, this week for Ann to see a cardiac sarcoidosis specialist about some recent issues with her heart. Of course, we did not travel to Rochester for her scans and doctor visits because of the coronavirus outbreak.⁣
⁣
Instead, her cardiologists called her from their homes and her scans and tests will likely be delayed until June or July. We'll keep in close touch with them if anything changes, as well. We are so grateful for all of the healthcare professionals who are continuing to work crazy hours from home as well as in our hospitals around the world.⁣
⁣
This is such an unprecedented and stressful time for all of them. Words will never be enough to convey our gratitude for the roles they are playing in the battle against this deadly virus while caring for those with other diseases and illnesses at the same time. ⁣

Every healthcare provider we've talked with in the last two weeks has had the same message for those of us who don't have to go to work at a hospital. ⁣
⁣
Just. Stay. Home.
  • Yesterday was Day 16 of social isolation for us. Because of Ann's underlying heart condition and suppressed immune system, we've cooked all our meals at home (no takeout). We've starting to get more and more creative as time has gone by. ⁣

Last night, we made chicken and shrimp vindaloo and learned online how to make homemade naan.⁣
⁣
It wan't as good as our favorite Indian restaurant, The Oven, but it did satisfy the craving we've had for Indian food. ⁣

  • We moved our living room furniture around this week and put two swivel chairs near the sliding glass door. Each day, we take time to turn around, rest our minds, enjoy in the view, and just be. #webelieveinhome
