You may not think there are healthy ways to eat po You may not think there are healthy ways to eat potatoes, and we understand why. Most of us are used to eating them as high-fat and high-calorie french fries or chips. When they're not fried, potatoes are often loaded up with butter, cheese, sour cream, and bacon. 

It turns out, there are lots alternative delicious and healthy ways to eat potatoes and they are a great source of vitamins, nutrients, and carbs. Tators are also filling, satisfying and typically inexpensive so they're easy on your grocery bill.

☀ Yesterday was another one of those rare winter days in Nebraska where the sun was shining, the sky was blue, and temperatures reached the mid 50s. We saw the forecast a few days prior and arranged our week so that we could spend some time outdoors and take a hike.⁣
⁣
🚙 We drove about an hour to Platte River State Park. See what we did there and what cut our hike short in our stories. ⁣
⁣
❄ We didn't get to take as long as a hike as we'd wanted. We are admittedly new at all this outdoor stuff and have a lot to learn. But we're experimenting and trying! Nonetheless, we did enjoy just getting out of the house, exploring nature, and taking time to breathe in fresh air and quiet our minds. And we'll definitely be going back. ⁣
⁣
🌲 As we've learned over the past year, taking a hike has lots of health benefits, as well. Spending time walking in nature can lower your risk for heart disease, improve your blood pressure and blood sugar levels, boost bone density, build muscle strength, and improve balance. ⁣
⁣
🌨 It's not always easy to get outdoors in the winter months, but this year, we're trying to embrace the cold and do what we can to get outside. How about you? How do you spend time outdoors in the winter? ⁣

📷 This photo (did you notice the ducky?) is from a few years ago when we stayed in the Emerald Room at @pwboardinghouse in Pawhuska, Okla. Seven of the eight rooms there have luxurious claw-foot bath tubs. Each includes rubber ducky - wearing a cowboy hat, of course. ⁣

💚 This is one of our favorite rooms at The Boarding House. The Wizard of Oz inspired suite features light gray walls with sharp black trim, mirrored furniture. ⁣
⁣
🛁 The enormous bathroom has floor-to-ceiling emerald green tile, a black and white checkerboard floor, a roomy glass shower, double vanities, and a dimmable crystal chandelier. Dreamy, isn't it? ⁣
⁣
✍ We've been fortunate to have stayed in all eight rooms at The Boarding House. But we weren't the first to do that. There's a link in our bio to a blog post we wrote about the first woman to stay in all eight rooms. Her story is heartwarming.
We took advantage of the nice weather today and go We took advantage of the nice weather today and got a few outside chores done. Steve got all of the Christmas lights taken down and stored away in an organized manner. ⁣

Today is Arkansas Day! Yes, we find something to c Today is Arkansas Day! Yes, we find something to celebrate as much as possible these days. Thankfully, we got ourselves a National Day Calendar this year that helps us out. ⁣

Arkansas was the last state we visited before the pandemic put our travel plans on hold.⁣
⁣
We had visited Bentonville in February for the opening of a new contemporary art museum called The Momentary. Our friend, Osage artist @addieroanhorse created a pattern titled "Sway" that is featured on the exterior glass of the Momentary's Tower, as well as a few other spaces. ⁣
⁣
The Momentary is a great addition to Bentonville, Ark. We visited Bentonville in 2019 and wrote a blog about the world-class Crystal Bridges Museum of American Art there. LINK IN BIO⁣

This photo was taken at Crystal Bridges. It is an incredible piece of blown glass called "Azure Icicle Chandelier" and as you may be able to tell, it is by Dale Chihuly. ⁣

We were stunned to find one of the best art museums we've seen anywhere in the world nestled in northwest Arkansas. And the best part? Admission is complimentary, thanks to the Walmart Foundation that created it. ⁣

This was us Friday afternoon before our date night This was us Friday afternoon before our date night. We were all smiles and excited to go out for dinner, albeit takeout in the back of our minivan. ⁣
⁣
To be honest, I haven't smiled much today. Our daughter, Meghan, has been working all weekend as an ICU nurse in Oklahoma where they have record numbers of new COVID cases and hospitalizations. My heart just absolutely breaks for her.⁣
⁣
She and her colleagues are physically and emotionally exhausted. They are not alone.⁣
⁣
Over the past week, we've spoken to several nurses who have all shared similar stories about overburdened hospitals that simply do not have enough resources, staff, space, and in some, even PPE. ⁣
⁣
One nurse said her hospital is so overcrowded it just staged 50 cots in a conference room to care for patients while they waited for rooms. ⁣
⁣
The nurses' COVID patients are critically ill, they gasp for air, and many are visibly scared to death. To make it worse, most are also alone - except for their nurses. ⁣
⁣
One of my nurse friends, Cari, wrote in a social media post, "I will be forever haunted by comments like 'I don’t want to die,' 'I just want to go home,' 'this is a lonely virus,' 'I don’t understand, he was just working cows and making fence last week,' and spouses saying goodby to each other." ⁣
⁣
As we move into 2021, please remember that your local healthcare workers are still fighting this pandemic every single day. Many are working long hours, witnessing more tragedy and death than ever before, and they still need our help to slow the spread. ⁣
⁣

We had a fantastic date last night (see our storie We had a fantastic date last night (see our stories for more insight) and enjoyed delicious Greek food from @theparthenonlnk in Lincoln, Neb. 

As we were enjoying our spanakopita and tiropita in the back of our minivan, we reminisced about trip to Greece in the summer of 2018. 

We spent time there as part of a @celebritycruises voyage that began in Rome and made port calls in Sicily, Malta, Mykonos, Santorini, Rhodes, Athens, Naples, before going back to Rome. 

Greece had been a top destination on Ann’s bucket list for years and we enjoyed every single minute we spent there. 
We took a cooking class in Mykonos, visited a winery and archeological site in Santorini, climbed the Acropolis in Athens, and did an island tour in Rhodes. 

Needless to say, we had a wonderful trip, and when we left, we knew we wanted to return one day. Hopefully soon.

It's date night! We've spent most of this week coo It's date night! We've spent most of this week cooped up at home and we're excited to put on a real clothes and go out to eat. Well, sort of. ⁣

With Ann's suppressed immune system and health issues, it's a little risky for us to dine inside a restaurant. But where there's a will, there's a way. ⁣
⁣
We had an idea last month to transform our @chrysler Pacifica minivan into a quaint dining venue for two. We tried it for the first time a few weeks ago with a take-out order from one of our favorite Indian restaurants, and enjoyed a warm meal from the comfort of our minivan. ⁣
⁣
It was a great way to get out of house, enjoy something new, and support a local restaurant and small business. (Don't worry, we tipped as if we were eating in.) ⁣
⁣
Tonight, we're driving back to Lincoln to try another one of Lincoln's favorite restaurants. Watch our stories to see where we go! ⁣
