🥦🧅🫑Last night, we cleaned out the produce 🥦🧅🫑Last night, we cleaned out the produce drawer in our fridge and whipped up big bowl of stir-fried veggies for dinner. 

To make this dish, I just browned some chopped garlic and ginger in a teaspoon of sesame oil. 

Then, I added a whole bunch of raw vegetables that I’d cut into 1” pieces. 

When the veggies were cooked through, I added a sauce and stirred to coat. I served the vegetable stir-fry with half a cup of cooked brown rice (that I had in the freezer). It was delish, and no produce went to waste this week! 

For the sauce, mix:
- 1/2 c vegetable broth
- 1 Tbsp Mirin 
- 2 Tbsp low-sodium soy sauce
- 1 tsp crushed red pepper
- 1 Tbsp honey (or Swerve brown sugar)
- 1 tsp fresh ginger 
- 1 tsp fresh garlic 
- 1 Tbsp cornstarch

🥦🥕🧅🫑 Here’s a quick and healthy dinn 🥦🥕🧅🫑 Here’s a quick and healthy dinner at home idea. Last week, I was trying to get through all of our fresh produce before we left Pawhuska. 

For a quick and healthy dinner, I chopped a whole bunch of veggies into tiny pieces and cooked them in my @ourplace Always Pan with just a tablespoon of olive oil. 

I added my favorite Greek seasoning and some black pepper to the mix. Once the veggies, starting to get tender, I added just half a cup of cooked couscous, lentils, orzo, and quinoa I had left over in the fridge.

It made a great side dish served with grilled shrimp (for Ann) and grilled pork chops (for Steve) and steamed broccoli. 🥦And, we got lots of nutritious veggies into our meal.

It was a 1920s-themed event and we had most fantastic time supporting our local Chamber of Commerce, seeing friends, and celebrating one of the best small towns in America. 

Have you been to Pawhuska, Okla.? Our town is home to The Pioneer Woman Mercantile (which just reopened), the Osage Nation, and the Tallgrass Prairie Preserve.

🥗 Here’s a 477-calorie dinner at home meal th 🥗 Here’s a 477-calorie dinner at home meal that has helped us lose a combined 200 pounds. 

Here’s how we made it. 

We started with some cilantro, lime, brown rice, then added, shredded lettuce, canned pinto beans, diced tomatoes, grilled bell, peppers, and onions, and homemade guacamole with a fresh Jalapeño and lime garnish. 

To make the cilantro, lime rice, I just added cooled cooked rice to a nonstick pan to heat. I added a little bit of kosher salt, about half a cup of chopped cilantro, and the juice and zest of one to two limes. I put the leftover rice in a freezer bag and stored it in the freezer. 

This a quick and easy meal, and so delicious!
