Who doesn’t love a shrimp cocktail appetizer? It Who doesn’t love a shrimp cocktail appetizer? It is one of Ann’s favorite things to order, especially since starting @noom , as it is low in calories and tastes delicious.

Each restaurant serves this seafood favorite a little differently, but this was the most unique we’ve had yet. And it was spectacular!

On our hosted trip to Kansas City, we started our first meal  @chazontheplaza with this KC Smoked Shrimp Cocktail. It is brined and smoked Argentinian red shrimp with Bloody Mary cocktail sauces, sliced avocado and lemon.

It was served chilled and the smoky flavor added so much to this appetizer. Even Steve, who doesn’t usually eat seafood, enjoyed it.

Yesterday, on our way home from Kansas City, we go Yesterday, on our way home from Kansas City, we got to go inside the nursing home and hug, pray with, and hold the hand of Ann's grandma, Luceen, for the first time in more than a year.

She is 98 years old and lives in a nursing home where, like many of our elderly, she has spent the past 13 months confined to her room to lessen her risk of getting or unknowingly spreading COVID-19.

Praise God, she is still with us. And now, with residents and staff fully vaccinated, and community spread on the decline, we were able to visit for the first time without distancing. Until yesterday, our visits were done over the phone, from opposite sides of a  glass door, or distanced outdoors (just once) last summer. For more than a year, we had looked forward to this day where we could visit inside without distancing.  As we expected, it was very emotional.

Community spread was one of the factors that prevented nursing home residents all over the country from seeing their families. It was one of many reasons that we were and continue to be so committed to doing our part. It's why we stayed home, wore masks, distanced, and washed our hands.

And if nothing else, for this moment, it was and continues to be totally worth it.

We realize not everyone had opportunities like the one we had yesterday. Our hearts grieve for the 561,000 who have died of this awful virus so far and the millions of families and friends who lost loved ones. Healthcare workers continue to be admired as our heroes and we will be forever grateful for all they have done to care for others in such an unprecedented time of need.

Our daughter, Meghan, is an ICU nurse and she worked this weekend. However, we are grateful to have been able to attend a Good Friday church service together with her.⁣

This week, we're finishing up a few things at our home here that we call @postcardplce. We've got quite a few groups of people booked to stay here in April (but there are still a few open dates) and it's a beautiful time to Visit Osage County. Tomorrow, we'll set off for Kansas City where we'll spend most of this week. We're thankful for the opportunity to be hosted by @raphaelhotelkc and @chazontheplaza. They've worked hard to create a thoughtful, low-risk, and luxurious stay and we can't wait to take all of you with us!

If nothing else, the pandemic over the last year has been a constant reminder to us of the vital role of our faith in loving and forgiving God. For us, this has been a year of reflection, repentance, and renewal and we give all of the glory to God. ⁣

If you ever has questions about what is means to have a personal relationship with Christ, we'd love to talk with you more about it. Christ has been an integral part of our both of our lives for more than 20 years.  We just love sharing the miraculous ways He changed both of us from the inside out.
Good morning, friends! Last night we drove to Tuls Good morning, friends! Last night we drove to Tulsa to see our daughter, Meghan, and worship with others inside a church for the first time in more than a year. Yes, it was glorious!⁣

Throughout the pandemic, we've been watching church services online and hadn't been inside a church for worship since March 8, 2020. Ann has heart issues and a suppressed immune system so we've been done our best to reduce our risk of getting or unknowingly spreading the coronavirus throughout the pandemic. We've avoided indoor, group settings where masks aren't worn and distancing wasn't possible.⁣
⁣
We are so thankful that Meghan found @cornerstonetulsa online. This church has done so much to lower the risks of illness and everyone in attendance did her/his part to make anyone feel welcome. Masks were worn (properly), rows were blocked off to create social distancing, sanitizer was available, and they even had a QR code that led to information about the church and a visitor sign in. We felt so welcomed and loved and it was a beautiful beginning to this glorious Easter weekend. ⁣

This morning, we got outside and exercised a bit and did a little housework. The weather here in Pawhuska, Okla., was just perfect today - sunny and 65. We took advantage of the nice day and made one of our favorite warm weather meals - Key West Chicken and southwest salad. ⁣
⁣
We marinate and then grill boneless, skinless chicken thighs and serve them with a large portion (about 3/4 of Ann's plate) of the southwest salad. We shared the Key West Chicken recipe on our blog last summer and you can find it through the link in our bio. ⁣

The recipe is included in a post about all of our favorite foods to grill. After a long, cold winter, we're definitely ready for grilling season at our place. ⁣

We spent most of today at the Mayo Clinic in @minn We spent most of today at the Mayo Clinic in @minnesotas_rochester where Ann had a full day of appointments. We can't say it enough - this place never ceases to amaze us. We always hear from Mayo employees that the needs of the patient come first, and they mean it. ⁣

Ann has received exemplary care this week and we love that everyone here is also more than happy to work closely with our local docs back home. ⁣
⁣
Mayo Clinic and Rochester, Minnesota are special places. We're grateful to be here. ⁣
