It has been about a year since the beginning of th It has been about a year since the beginning of the pandemic in the U.S. Earlier this week, our country surpassed 500,000 deaths. ⁣
⁣
As most of us recognize, the toll that this virus has taken goes well beyond the tragic loss of life - especially when it comes to our healthcare workers. ⁣
⁣
A new study, led by University of Utah Health scientists, suggests "more than half of doctors, nurses, and emergency responders involved in COVID-19 care could be at risk for one or more mental health problems, including acute traumatic stress, depression, anxiety, problematic alcohol use, and insomnia.⁣
⁣
The researchers found that the risk of these mental health conditions was comparable to rates observed during natural disasters, such as 9/11 and Hurricane Katrina." (Source: Journal of Psychiatric Research)⁣

With these things in mind, we want to encourage you to check in on your healthcare worker friends. Make time to call them and listen with an empathetic ear. Send them a note of encouragement. Ask how you can help and follow through. ⁣

A week ago today we were bundled up in blankets as it was -28° at our place in Crete, Nebraska. Today, as we crossed the border from Kansas into Oklahoma, it was 73° and we were in short sleeves. ⁣
⁣
We drove to our second home in Pawhuska, Oklahoma, today to take care of a few things here and to see our daughter, Meghan. Hopefully by the end of the week we'll be able to help her move back into her apartment which had extensive water damage after a water pipe froze and burst during the recent cold snap. ⁣
⁣
Thankfully, the weather is warming up here and we're grateful for that. It felt good to feel the warmth of the sun on our faces again today and know that spring is just around the corner. ⁣

It has not been easy on them and many have suffered from fatigue, depression, and anxiety brought on by this pandemic. ⁣

Egg roll in a bowl has been a popular Pinterest recipe for awhile. Ann put her own spin on it and got the recipe to 140 calories per serving when made with shrimp. However, you can also make it vegetarian, or with beef, pork, chicken, or turkey. ⁣
⁣
It is super easy to make, requires just one pan, and is ready to eat hot and fresh in about 25 minutes. Best of all, it won't break your calorie or grocery budget.⁣

🌹 It will be difficult to ever top the Valentin 🌹 It will be difficult to ever top the Valentine's Day celebration we had last year at @pwboardinghouse in Pawhuska, Okla. We spent two glorious nights at @thepioneerwoman Ree Drummond's eight-room boutique hotel and she and her staff brought the romance. And A LOT of it!

🍽️ From the long-stemmed roses (and the prosciutto ones) and a five-course candlelit dinner to the Valentine's Day cocktail and a bed and claw-foot tub covered in red rose petals -- everything was simply over-the-top romantic! 

💕 It was an unforgettable Valentine's Day weekend full of romance. The memories of it are warming our hearts all over again this year on a cold and snowy day in Nebraska. ❄️

Barbados was our first stop on a Caribbean cruise on the @celebritysummit and a place that brings back fond memories of the beautiful flora, including this Bird of Paradise. ⁣
⁣
The Bird of Paradise flower is made of three bright orange petals and three blue petals that are all attached in a single bud. As the flower blooms, each petal comes to life, it makes a shape that resembles a tropical bird in flight. We think they are just stunning. ⁣
